Masala Whole Meal Bread (In Microwave)


          This is just like any other homemade bread but with a difference. I added some spices like cumin seeds and nigella seeds to try out something new. The baking was done in the convection mode of a microwave oven at 180 degrees c for 40 minutes. So enjoy as a tea time snack or for breakfast.








  • 1 cup Atta (whole wheat flour)
  • 1 1/2 cups maida (plain flour)salt to taste
  • 2 tsp. active yeast
  • 2 tsp. sugar
  • 3/4 cup lukewarm water
  • 3 tbsp. oil
  • 1 tsp. nigella seeds (kalonji)
  • 1 tsp. cumin seeds
  • 2 tbsp. oats
  • oil to grease the loaf tin
  • butter to brush





          In a bowl, mix together the yeast, sugar and water. Cover and leave aside for 10-15 minutes. By then it will have swelled up and become frothy. Grease a loaf tin and keep aside.

          Sift together atta and maida. Add salt, nigella seeds, cumin seeds and 2 tbsp. oil. Mix well till it resembles bread crumbs. Add the oats and combine. 

          Now add the yeast mix and required quantity of water. knead into a smooth dough. Add 1 tsp. oil and continue to knead for approx 15 minutes till all the oil is absorbed.

          Apply some oil all over and leave it to rest in a greased bowl in a warm place for an hour.
By then the dough will have doubled in size. Knead again for 5-10 minutes by adding some more oil. 

          Give a log shape to the dough. Brush with some oil on the surface and sprinkle oats over it. Transfer to the loaf tin and leave it to rest in a warm place for another 25-30 minutes.

          Preheat the oven for 5 minutes at 180 degrees C. Bake for 40 minutes. After 30 minutes, cover the tin with a foil and continue to bake. (I baked in a microwave oven in the convection mode).

          Let it rest for 15 minutes. Take it out of the oven. Check by tapping. It should sound hollow. Apply butter over the surface and allow it to stand for 10 minutes.

          Flip it over on the rack and let it cool down considerably. Store in an airtight container. Slice and serve with jam / bread or as desired.





                              Mix yeast, sugar & water. Cover & keep aside for 10-15 min.



                             By then it will turn frothy. So take a large bowl for this purpose.



                               Mix atta, maida, salt, oil, cumin seeds & nigella seeds.



                                 Add oats to the mix & combine.



                                Add the yeast & knead....



                               .......into a dough. Keep aside in a warm place for an hour.
                


                                Grease a loaf pan & keep aside.



                            After an hour, the dough has risen considerably. Knead again & ....



                                ........give it a shape of a log.



                          Transfer to the greased tin & keep in a warm place for 25-30 minutes.



                                After 25-30 minutes, the dough has risen.



                                Bake at 180 degrees C. for 40 minutes.
                         
   

                                Keep aside to cool on the rack before slicing them to serve.
